This is one of my favorite side dishes and it’s so easy to make. Plus it gets rid of leftovers. My mom made these all the time when we were kids, so there is some nostalgia involved as well. These potato pancakes are a great alternative to greasy french fries and are a nice change.
Start with some leftover mashed potatoes. I had about 2 cups leftover mashed potatoes. I’m assuming your potatoes would already be seasoned with salt and pepper, but if they aren’t, add some.
Now add eggs until your potatoes are the consistency of a thick pancake batter. To my 2 cups mashed potatoes, I added 3 eggs. Notice I even used the same container I’d stored the potatoes in? We’re not too fancy around here.
That’s it for the batter. People often add flour, but I don’t see a need and if I can do something in less steps, I generally do.
Now it’s time to cook! Cook them just as you would pancakes. Heat up a skillet on medium/medium-low heat and cover it with non-stick cooking spray. I use a cookie scoop to scoop batter onto the pan.
Now just let them cook until the undersides of the pancakes are golden brown and then flip. I find the best instrument for this is a mini spatula. Let the other side cook until it’s golden brown as well.
These are so fun and small enough for little hands. You can eat them plain or tell your kids they are french fries and dip them in ketchup. Sometimes I totally condone lying to your children.
